Clover Club Cocktail

3 ounces Plymouth gin.
3/4 ounce fresh lemon juice
1/2 ounce simple syrup*
8 large raspberries (use a few more if berries are very small)

Clover Club Cocktail

The Clover Club was a Philadelphia men’s organization, dedicated to “raillery and refreshment,” from the late 1880s until the First World War. It seems to have acquired its own cocktail sometime in the early 1900’s. Originally made with raspberry syrup, the drink is much improved with the addition of fresh (or even frozen) berries. For a completely smooth drink, strain through a fine mesh strainer. Otherwise, use a separate cocktail strainer (not the strainer top that comes with your shaker).

Makes 2 drinks

Place all ingredients in a cocktail shaker. Fill with ice. Shake very hard for a couple of minutes and strain out into two small cocktail glasses or champagne coupes.

 * For simple syrup, mix equal parts water and granulated sugar in a small saucepan. Heat until the sugar is dissolved and mixture just comes to the boil. Remove from heat and let cool.
