1 – 2 heads romaine lettuce, outer leaves removed

1 ounces Parmigiano-Reggiano cheese, coarsely shredded (about 1/3 cup)

Fresh ground black pepper


1/2 small baguette or loaf of Italian bread

1-1/2 tablespoons extra virgin olive oil

1 tablespoon butter

1 large clove garlic, sliced very thinly

kosher salt


1 teaspoon anchovy paste or 2 anchovies

1/4 teaspoon minced or pressed garlic

1/4 teaspoon kosher salt

1 egg

2 tablespoons fresh lemon juice

1/2 cup extra virgin olive oil

Caesar salad

Wash and dry the lettuce. Tear into bite sized pieces and place in large bowl. Set aside.

For the croutons:

Cut the bread into 3/4-inch cubes. You should have about 4 cups of bread cubes.

Heat the oil and butter in a large sauté pan. Add the garlic and cook for a couple of minutes, until garlic is fragrant and starting to brown. Strain the garlic out and return the fat to the pan. Drain the garlic chips on paper towels for a few minutes and then move to a bowl for snacking or salad garnish.

Add the bread cubes and toss to coat evenly with oil and butter. Over medium heat, cook, stirring frequently, for 10 minutes or so until golden brown on the outside but still slightly soft inside. Remove from heat and sprinkle lightly with salt. Let cool.

Alternatively, place bread cubes in a large bowl, and toss with the strained, heated oil

mixture. Pour onto a sheet pan in a single layer and sprinkle with salt. Bake at 350 degrees for 10-20 minutes, or until golden brown on the outside but still slightly soft inside. Remove from oven and let cool.

For the dressing:

Mash together the anchovy, garlic and salt in the bottom of a small heavy bowl. Add the egg and whisk until thoroughly combined and slightly frothy. Stir in lemon juice. Slowly drizzle in the oil, whisking constantly, until combined. Transfer to pitcher or cup with a pouring lip.

To assemble:

Carefully pour about one-third of the dressing around the sides of the bowl. Toss the lettuce gently to coat with the dressing, adding more if necessary. Add the croutons, garlic chips (if desired), cheese and fresh ground pepper and toss to distribute.
